These applesauce oat muffins are 'berry' good!
Made with no butter, you wouldn't think these soft and juicy muffins are low-fat. You could also substitute the blueberries or blackberries for raspberries or even dried apricots - use your imagination!
INGREDIENTS
* 1-1/2 cups all-purpose flour
* 3/4 cup quick-cooking oats
* 1/2 cup brown sugar
* 1 tablespoon baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 2 eggs
* 3/4 cup milk
* 1/3 cup and 2 tablespoons unsweetened applesauce
* 1/2 cup blueberries
* 1/3 cup blackberries
DIRECTIONS
1. In a bowl, combine the first six ingredients.
2. In another bowl, combine the eggs, milk, and applesauce. Stir into dry ingredients just until moistened.
3. Fill four greased muffin cups two-thirds full. Bake at 400 degrees F for 12-15 minutes or until a toothpick comes out clean.
4. Cool for 5 minutes before removing from pan to a wire rack.
