Oatmeal Raisin No-Egg Chocolate Cookies

These chewy egg-free oatmeal cookies are delicious! No more having to choose between chocolate chip or oatmeal raisin. Now you can have both!

Oatmeal Raisin CookiesAnd these tasty treats have no eggs, so that means you can lick the bowl without worrying about salmonella poisoning.

Whip these up for the family or some bingo friends, they'll be a hit, and so will you!


Ingredients:

* 1 cup margarine (non-vegans can use butter, people cooking for vegans should make sure that the margarine contains soy lecithin and not regular milk-derived lecithin)
* 1 cup brown sugar
* 1 cup white sugar
* 2 tsp vanilla
* 2 tbsp soy milk
* 6 tbsp apple sauce

* 2 cup flour
* 1 tsp baking soda
* 1 tsp baking powder
* 1 tsp salt
* 2 tsp cinnamon

* 2 cups oats
* 1 cup raisins
* 2/3 cup chocolate chips

Directions:

1) Preheat oven to 350ºF.

2) Combine margarine and the sugars and beat until creamy.

3) Add vanilla, milk, and apple sauce and beat until creamy.

4) In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.

5) Add the dry ingredients and the wet ingredients and combine until just mixed.

6) Add the oats, raisins, and chocolate chips.

7) Bake on ungreased cookie sheet for approx. 8-10 minutes until slightly golden. Remove from cookie sheet then let cool!

8) Repeat until you're out of cookie dough or you're sick of making cookies.
